Festive Gingerbread Eggnog Cocktail

During this time of year, when the days are colder and shorter, it’s especially nice to gather with loved ones and toast to the winter season.  Add some sugar and spice to your event with Metro’s Gingerbread Eggnog Cocktail!  This rich and sweet beverage is an exquisite blend of rum, syrup, cream, milk, cinnamon and nutmeg.  If any of your guests are lactose-intolerant replace the milk with soy, oat or any other milk substitute. 
Did you know there is no right or wrong alcohol to add to eggnog?  It can be made with any number of different distilled spirits—rum, sherry, cognac, and whiskey are all suitable for eggnog.  Some even suggest that it should be a mix of two dark distilled spirits to balance out the sweet treacle flavor of eggnog, but it’s best to try them out and see what works best for you.  Metro’s recipe below recommends a spiced or amber rum.  Might I suggest  Sailor Jerry Spiced Rum, which can be found at the LCBO.  This spirit is a medium amber rum flavored with a blend of spices, with strong notes of vanilla and cinnamon.

Little ones at your gathering?  You can easily make a side batch of this recipe into a mocktail or “virgin eggnog” by omitting the rum.

INGREDIENTS:
4 eggs
½ cup (125 ml) sugar
1 cup (250 ml) spiced or amber rum
½ cup (125 ml) Monsieur Cocktail ginger syrup
1 cup (250 ml) 35% cream
3 ½ cups (875 ml) milk
¾ tsp (3.75 ml) ground cinnamon
½ nutmeg grated
Optional:  Mint and cinnamon for garnish.
PREPARATION:

Separate the egg yolks and whites into two bowls.
Whisk the egg yolks with half the sugar until combined.
Add rum, syrup, cream, milk, cinnamon and nutmeg to the egg yolk mixture in a punch bowl or serving bowl.  Mix well.
In the bowl of egg whites, add the rest of the sugar and whisk to stiffen them.
Pour ⅔ of the stiff eggs into the serving bowl and serve in cups.
Garnish each cup with a ladle of the remaining stiff eggs, cinnamon and mint.
