A St. Patrick’s Day Infusion–3 Ways!

With St. Patrick’s Day this week, many will head to a local pub to celebrate but I’m more intrigued to the idea of recreating the Irish-pub experience in the comfort of my home. Our friends at the LCBO have created an online catalogue highlighting a plethora of Irish based whiskies, stouts, ciders, ales and celebratory cocktails to toast the occasion, complete with Irish-themed meal recipes!
I’ve highlighted my favourite ideas below to show how easily you can infuse your Irish favourites from the LCBO into every component of your feast: a beverage, an entrée, and dessert!
The beverage:
We must start the evening off right, with a punch bowl of a whiskey, brandy, Cointreau, apple and lemon juice blended with chilled orange pekoe tea called ‘Irish Eyes’. You can make this simple punch bowl recipe ahead of time and keep chilled until ready to serve. Drink responsibly. Check out the Irish Eyes recipe.
The entrée:
Traditional Irish pub provisions are hearty and full of comfort, like this slow-cooked meal ‘Guinness and Treacle-Glazed Roast Lamb Shoulder. Secure a lamb shoulder from Metro’s meat department, along with the herbs and spices needed for the rub (make sure to prepare the rub the day before you are serving this meal). This glaze for this dish includes the use of a can of Guinness or another dry stout. Gently pour the Guinness–treacle (golden syrup)–malt vinegar mix over the lamb 30 minutes into cooking and once again 45 minutes later when done. See this recipe for the step-by-step instructions.
The dessert:
Complete the meal with this rich and intense Dark-Chocolate Whiskey Cake. This decadent cake with not only has whiskey inside the cake, but its also served warm and encompassed with a thick chocolate-whiskey drizzle and topped with fresh raspberries.
