For the Love of Cheese

It’s dinner time and what are you craving—something super-cheesy? Well, for the cheese-lovers out there Metro has two enticing recipes that together create the ultimate spread. The ‘Two-Cheese Prosciutto Pizza’ is an easy, pull-apart Italian creation topped with two decadent cheeses, prosciutto, red onion and fresh salsa. This pizza is perfect with a sweet and savoury side, like a ‘Pear and Blue Cheese Salad’. This mix of crumbled blue cheese, diced celery and fresh pear on top of a spring mix of lettuce will have you licking your lips! I know this might sound cheesy, but I think they are really “grate”.
TWO-CHEESE PROSCIUTTO PIZZA
INGREDIENTS:
2 tbsp (30 ml) Mezzo olive oil
PREPARATION:
Preheat oven to 500 °F (260 °C).
Roll out pizza dough.
Put dough or flatbread on a baking sheet.
Slice cheese very fine.
Spread salsa on crust.
Cover with prosciutto and cheese slices, onion rings and basil.
Top with shredded cheddar.
Bake until browned.
Drizzle a little balsamic vinegar and olive oil over the pizza just before serving.

PEAR AND BLUE CHEESE SALAD
INGREDIENTS:
¼ cup mayonnaise
½ cup celery, diced
Lettuce
PREPARATION:
Halve and core the 4 pears.
Brush cut surfaces with 1 tbsp (15 mL) lemon juice.
Combine ¼-cup (60 mL) mayonnaise, 1 tbsp (15 mL) milk, ½-cup (125 mL) diced celery and 3 tbsp (60 mL) crumbled Blue cheese.
Spoon over pears.
Serve each pear half on a bed of lettuce leaves.
